ROASTED RED PEPPER HUMMUS

INGREDIENTS:
• 1 CAN (15 OZ) CHICKPEAS (GARBANZO BEANS), DRAINED AND RINSED
• 1/2 CUP JARRED ROASTED RED PEPPERS (OR, IF YOU HAVE THE TIME, 1
ROASTED RED BELL PEPPER)
• 1 TBSP TAHINI (SESAME PASTE, OPTIONAL)
• 2 TBSP OLIVE OIL, PLUS EXTRA FOR DRIZZLING
• 1 GARLIC CLOVE, MINCED
• 2 TBSP FRESH LEMON JUICE
• 1/2 TSP GROUND CUMIN
• SALT AND PEPPER TO TASTE
• WATER TO THIN, AS NEEDED
• A PINCH OF SMOKED PAPRIKA OR CHILI POWDER (OPTIONAL, FOR GARNISH)
INSTRUCTIONS:
PREPARE THE INGREDIENTS: DRAIN AND RINSE THE CHICKPEAS WELL. IF YOU'RE USING JARRED ROASTED RED PEPPERS, DRAIN THEM AND REMOVE ANY EXCESS MOISTURE.
